Con una singular cata de Aceites de Oliva y maridaje con platillos y vinos, llevamos a cabo nuestra primera cata del a\u00f1o 2018. El evento se llev\u00f3 a cabo en el restaurante Quattro ubicado en el Hotel JW Marriott en Santa Fe, Ciudad de M\u00e9xico.<\/h4>\n

Es nuestro compromiso que m\u00e1s y m\u00e1s consumidores y del mundo de la industria restaurantera conozcan y sepan apreciar las cualidades del aceite de oliva extra virgen aut\u00e9ntico, que lo prueben, que distingan sus sabores y aromas y que no s\u00f3lo piensen en una grasa m\u00e1s para cocinar o para acompa\u00f1ar un pan. As\u00ed como los sommeliers analizan los aromas y sabores del vino, as\u00ed tambi\u00e9n se aprende a analizar los\u00a0aceites de oliva.<\/h4>\n

Nuestro sommelier “Luca” Lockwood inicio la cata con 4 Aceites de Oliva extra virgen de distintas productores y regiones del mundo, as\u00ed aclarar que podemos tener aceites de olivas de excelente calidad independientemente de la regiones. Mientras el guiaba a los participantes a analizar las caracter\u00edsticas organol\u00e9pticas del aceite, los participantes quedaban impresionados por las diferencias en aroma, sabor e intensidad que cada cultivar ofrec\u00eda.<\/h4>\n

Comenzamos con unos aceites m\u00e1s suaves y notas afrutadas hasta llegar a sabores m\u00e1s robustos e herb\u00e1ceos. Es importante destacar que lo primero que se debe de aprender es como reconocer un aceite de oliva extra virgen aut\u00e9ntico, ya que la etiqueta no es garant\u00eda de nada. Mas all\u00e1, las principales caracter\u00edsticas que analizan los catadores profesionales es el balance que hay entre los sabores afrutados, el amargo y picor del aceite. La cata culmino con unos los aceites de oliva m\u00e1s condecorados mundialmente de la casa de Oro Bailen de Espa\u00f1a.<\/h4>\n

\u00a0Los participantes se llevaron una experiencia \u00fanica y sobre todo el conocimiento sobre este ancestral ingrediente, el reconocer que todos no est\u00e1n hecho de la misma manera y que de su calidad depende el beneficio saludable y sabor.<\/h4>\n

Con el compromiso de ofrecer s\u00f3lo excelencia en Aceites de Oliva y Bals\u00e1micos, el Chef Fabio Picchi, prepar\u00f3 los platillos marinando algunos con los aceites probados en la cata, as\u00ed los participantes pudieron reconocer las aplicaciones culinarias de este maravilloso ingrediente.<\/h4>\n
